Product Features
"Yuncheng Flour" has a pure color, with slightly yellow in white. Processed and steamed noodle products have a stronger wheat flavor, with sweet taste, and a delicate texture, which is particularly chewy.
Yuncheng wheat belongs to the dominant production area of strong and medium gluten in the northern part of the Yellow Sea. In addition, the unique soil and excellent varieties make Yuncheng wheat rich in carotenoid content. The content of carotenoids in Yuncheng wheat remains stable at 6.1-8.6mg/kg. The visual appearance of Yuncheng flour is characterized by a white with a slight yellow colour, which is a manifestation of its abundant carotenoids.

运城是中华民族文明的发祥地之一,也是农耕文明的重要发祥地之一。
舜耕历山、禹凿龙门、后稷稼穑、嫘祖养蚕等故事都发生在运城,特别是被称为农耕始祖、五谷之神的后稷,在稷王山一带教民稼穑开创了灿烂的农耕文明;后土圣母是中华最古之祖,土地最尊之神,现存于运城万荣的后土祠,是海内祠庙之冠,北京天坛之源;尧、舜之时,夏、商、周三代,都在这里举行祭祀活动;历史上43位皇帝拜祭后土;汉武帝六次前来祭拜,留下了千古绝唱《秋风辞》,充分展示了古代帝王对土地的敬重和依赖,生动展示了运城历史悠久的农耕文化;唐代诗人卢纶曾在其《送绛州郭参军》诗中咏及汾水下游丰收在望的麦景:“炎天故绛路,千里麦花香”。
新中国成立以来,运城13个县(市、区)中有11个曾被列为山西省商品粮基地县,其中6个被确定为全国商品粮基地县。上世纪五十年代初,运城面粉跨过鸭绿江,支援过抗美援朝。七十年代中期,运城面粉支援唐山地震灾区人民。运城面粉凭借“粉色正、筋力强、麦香浓、口感好”,质量上乘,在全省及至全国享有盛誉。
Humanistic History
Yuncheng is one of the birthplaces of Chinese civilization and an important cradles of agricultural civilization.
The stories of Shungeng Lishan, Yu chiseled the Dragon Gate, Houji farming, and Leizu raising silkworms all took place in Yuncheng, especially Houji, known as the ancestor of agriculture and the god of the five grains, who taught people farming and created a brilliant agricultural civilization in the Jiwang Mountain area; The Holy Mother of Houtu is the oldest ancestor of China and the most revered deity of the land. It exists at the Houtu Temple in Wanrong, Yuncheng, and is the crown of temples in the sea and the source of the Temple of Heaven in Beijing; During the time of Yao and Shun, the three generations of Xia, Shang, and Zhou held sacrificial activities here; In history, 43 emperors worshipped Houtu; Emperor Wu of Han Dynasty came to worship six times, leaving the immortal “Autumn Wind Poem”, which fully demonstrates the ancient emperors' respect for and dependence on the land, and vividly showcasing the long-established agricultural culture of Yuncheng; Tang Dynasty poet Lu Lun once wrote in his poem “Farewell to Guo Canjun in Jiangzhou” about the wheat scenery in the lower reaches of the Fen River, where a bountiful harvest is in sight: “In the scorching summer, the road leads to Jiangzhou, and thousands of miles of wheat flowers are fragrant.”
Since the establishment of the People's Republic of China, 11 out of the 13 counties (cities, districts) in Yuncheng have been designated as commodity grain base counties in Shanxi Province, of which 6 have been designated as national commodity grain base counties. In the early 1950s, Yuncheng Flour crossed the Yalu River to support the Korean War. In the mid-1970s, Yuncheng Flour supported the people in the Tangshan earthquake stricken area. Yuncheng flour is renowned throughout the province and even the country for its excellent quality, characterized by its well color, strong gluten, strong malt aroma, and good taste.
产地环境
运城农业生产条件得天独厚:地处黄河北干流中游以东,地势平坦,气候适宜,光照充足,土壤肥沃,多为石灰性褐土,中性偏碱,以壤土为主,土层肥厚,磷钾含量丰富,有利于小麦营养成分的生长,同时兼有黄河及其支流之水的灌溉。
运城小麦多在10月左右秋播,日平均气温为16.0℃,有利于冬小麦正常出苗;第二年3月中旬至4月上旬,气温迅速回升,日均气温10.1℃,有利于起身到拔节期的平稳生长,不狂不旺;5月中旬至6月上旬,处于灌浆到成熟期,这个时段常年日平均气温21.7℃,有利于小麦灌浆和干物质积累,对小麦蛋白质积累、面筋形成等十分有利,加工的运城面粉质感细腻,特别筋道。
保护范围:运城市现辖的1区2市10个县(盐湖区、永济市、河津市、临猗县、芮城县、万荣县、稷山县、新绛县、闻喜县、夏县、绛县、平陆县、垣曲县)。
Origin environment
Yuncheng has unique agricultural production conditions:it is located in the east of the middle reaches of the northern main stream of the Yellow River, with flat terrain, suitable climate, sufficient sunlight, fertile soil, mostly calcareous brown soil, neutral alkaline, mainly loam soil, with a thick soil layer and rich phosphorus and potassium content, which is conducive to the growth of wheat nutrients, and also irrigates the water of the Yellow River and its tributaries.
Yuncheng wheat is mostly sown in autumn around October, with a daily average temperature of 16.0℃, which is conducive to the normal emergence of winter wheat seedlings; From mid-March to early April of the second year, the temperature rapidly rises, with a daily average temperature of 10.1℃, which is conducive to stable growth from rising to jointing, without being wild or vigorous; From mid-May to early June, it is in the stage of filling to maturity. During this period, the daily average temperature is 21.7℃, which is conducive to wheat filling and dry matter accumulation, as well as protein accumulation and gluten formation. The processed Yuncheng flour has a delicate texture and is particularly gluten rich.
