清徐陈醋色泽呈酱红色,酿造选用当地产的优质高粱、大麦、豌豆等五谷,经蒸、酵、熏、淋、陈等过程酿造而成,以“食而绵酸、口感醇厚、滋味柔和、酸甜适口、余香绵长”著称于世,更以“色、香、醇、浓、酸”享誉中外。
清徐陈醋中含有18种氨基酸,其中8种为人体所必须,另外还含有多种维生素,可促进胃液分泌、抑制血糖升高、软化血管、降低甘油三酯等独特功效。
Product Features
Qingxu aged vinegar has a sauce red color and is brewed using high-quality local grains such as sorghum, barley, peas and other five cereals. It is brewed through processes such as steaming, fermentation, smoking, pouring, and aging. It is known for its "smooth and sour taste, mellow and soft taste, sweet and sour taste, and long-lasting aftertaste", it is also renowned both domestically and internationally for its "color, aroma, mellow, strong, and sour".
Qingxu aged vinegar contains 18 amino acids, of which 8 are essential for the human body. In addition, it contains various vitamins that can promote gastric secretion, inhibit blood sugar elevation, soften blood vessels, and reduce triglycerides, among other unique effects.
人文历史
清徐古称梗阳,始建于春秋,历史悠久,人文荟萃,迄今已有3000余年的历史。早在春秋战国时期,太原市郊区就已经有了醋的生产足迹。经过历代酿造艺人的不断改进,清徐醋的质量日益提高,远近闻名。
清初顺治年间,酿醋作坊艺人王来福接管了“美和居”醋坊,改“陈年白醋”为“熏醋”,又用“伏晒、寒冻”之法,改进了清徐醋的“陈酿法”,从此,“美和居”名声大振,销量倍增,成了显赫一时的大商号;至民国十三年(1924年),当地私营醋作坊达四十余家,年产量两千吨左右;20世纪80年代初,形成了多种陈醋、老陈醋名优品牌。
2020年12月,中国轻工业联合会和中轻食品工业管理中心联合授予清徐县“中国醋都”称号;2022年9月,“清徐老陈醋”获批成为全省首批十大特色专业镇。
Humanistic History
Qingxu, also known as Genyang in ancient times, was founded in the Spring and Autumn period. It has a long history and is rich in human culture, with a history of over 3000 years. As early as the Spring and Autumn and Warring States periods, there were already vinegar production footprints in the suburbs of Taiyuan City. Through the continuous improvement of brewing artists, the quality of Qingxu vinegar has been increasingly improved, and it is well-known far and wide.
During the Shunzhi period of the early Qing Dynasty, the vinegar brewing workshop artist Wang Laifu took over the "Meiheju" vinegar workshop and changed the "aged white vinegar" to "smoked vinegar". He also improved the "aging method" of Qingxu vinegar by using the "sun drying and cold freezing" method. From then on, "Meiheju" gained a great reputation, doubled its sales, and became a prominent large business; By the 13th year of the Republic of China (1924), there were over 40 private vinegar workshops in the area, with an annual output of about 2000 tons; In the early 1980s, various famous brands of aged vinegar emerged.
In December 2020, the China Light Industry Federation and the China Light Food Industry Management Center jointly awarded Qingxu County the title of "China Vinegar City"; In September 2022, "Qingxu Aged Vinegar" was approved as one of the first ten characteristic professional towns in the province.
产地环境
清徐陈醋的“独特陈香”,还有其他地区无法效仿的因素:山西高原冬天寒冷、夏天阳光猛烈、昼夜温差巨大,使得所产杂粮糖分含量高(老陈醋原料均取自本地生产的高粱、大麦、玉米和豌豆);清徐陈醋的用水皆取自地下,水脉源自于天龙山。
注:天龙山原名方山,属吕梁山脉分支,海拔1700米,位于太原市西南36千米,天龙山屏峰黛立,松柏成阴,溪泉鸣涧,山中多砂页岩,森林覆盖率达70%,水质良好,是酿造山西陈醋极好的优质用水。
Origin environment
The unique aging aroma of Qingxu aged vinegar is due to factors that other regions cannot imitate: the cold winter in the Shanxi Plateau, intense summer sunshine, and huge temperature differences between day and night, resulting in high sugar content in the produced grains (The raw materials for aged vinegar are all sourced from locally produced sorghum, barley, corn, and peas); The water used for Qingxu aged vinegar comes from underground, and the water veins originate from Tianlong Mountain.
Note: Tianlong Mountain, formerly known as Fangshan, is a branch of the Lvliang Mountains, with an altitude of 1700 meters. It is located 36 kilometers southwest of Taiyuan City. The Tianlong Mountain is stand tall, scattered with pine and cypress trees, the mountain is rich in sand and shale, with a forest coverage rate of 70%. The water quality is good, making it an excellent high-quality water for brewing Shanxi aged vinegar.
产业发展
全县有“特、优”高粱基地6万亩,食醋相关企业81家,省级食醋技术研究专业中心4个,先后研发培育老陈醋、风味醋、保健醋、醋饮料等6大系列200余个品种,形成了四大龙头为引领的食醋链式产业集群,年产食醋规模达80万吨,占全国20%,位居全国区域食醋产销量之首,远销日韩、欧美等36个国家及地区,产业链年产值达65亿元,辐射带动近10万劳动力就业。
Industry Development
The county has a "special and excellent" sorghum base of 60000 mu, 81 vinegar related enterprises, and 4 provincial-level vinegar technology research professional centers. It has successively developed and cultivated more than 200 varieties of six series, including aged vinegar, flavored vinegar, health vinegar, and vinegar beverages, forming a vinegar chain industry cluster led by four leading companies. The annual production scale of vinegar reaches 800000 tons, accounting for 20% of the country, ranking first in regional vinegar production and sales in the country. It is exported to 36 countries and regions such as Japan, South Korea, Europe, and America, with an annual output value of 6.5 billion yuan in the industrial chain and radiating employment for nearly 100000 laborers.
